While the potatoes are roasting, crumble the drained tofu into a large, nonstick pan. Add the nutritional yeast, coconut aminos, garlic powder, pepper, and black salt. Cook over low heat, adding water one tablespoon at a time if the tofu begins to stick, for about 10 minutes. (10 minutes)

Incorporate the seitan and chopped tomato into the tofu scramble. Continue cooking until everything is heated through, approximately 20 minutes. (20 minutes)

Warm the tortillas lightly on a dry skillet or in the microwave to make them pliable. (5 minutes)

To assemble the wraps, lay a tortilla flat. Layer with roasted sweet potatoes, diced avocado, and a generous portion of the tofu scramble. Fold the bottom edge of the tortilla up and over the filling, then fold in the sides to create a secure wrap. (10 minutes)

Heat a flat-bottomed, cast iron pan or griddle over medium heat. Place the wraps in the hot pan, folded-side down, and cook until golden brown and sealed, about 4 minutes per side. (8 minutes)

For an extra layer of flavor, consider adding a dollop of your favorite green chili sauce or a drizzle of sriracha mayo to the wraps.
Feel free to experiment with different vegetables in the roasting mix. Bell peppers of various colors, zucchini, or even broccoli florets would be delicious additions.
Black salt (kala namak) provides a unique, egg-like flavor to the tofu scramble. If you can't find it, you can substitute with regular sea salt, but the flavor profile will be slightly different.
