Follow The Directions

01

Step

Brine Preparation (15 minutes): In a large stockpot over medium-high heat, combine chicken stock, kosher salt, brown sugar, dried minced onion, red pepper flakes, cinnamon sticks, black peppercorns, allspice berries, and candied ginger. Bring the mixture to a boil, stirring until the sugar and salt are completely dissolved.

02

Step

Cooling and Chilling (2 hours): Remove the stockpot from heat and allow the brine to cool to room temperature. Once cooled, refrigerate the brine until it is thoroughly chilled.

03

Step

Brining the Turkey (6 hours): In a clean, food-grade, 5-gallon bucket, combine the chilled brine and ice water. Submerge the turkey breast-side down in the brine. Ensure the turkey is fully immersed. Cover the bucket and refrigerate (or place in a cool basement) for 6 hours, turning the turkey halfway through the brining process to ensure even flavor distribution.

04

Step

Oven Preparation (15 minutes): Position an oven rack to the lowest level and preheat the oven to 500 degrees F (260 degrees C). Place a roasting rack inside a wide, low pan.

05

Step

Preparing the Turkey for Roasting (10 minutes): Remove the turkey from the brine and rinse it thoroughly inside and out with cold water. Discard the brine. Place the turkey on the roasting rack and pat it dry with paper towels. Tuck the wings back and generously rub softened butter over the entire bird, ensuring even coverage.

06

Step

Initial Roasting (30 minutes): Roast the turkey in the preheated oven for 30 minutes. This initial high-heat roasting helps to create a crispy skin.

07

Step

Temperature Adjustment and Foiling (5 minutes): Remove the turkey from the oven. Insert a probe thermometer into the thickest part of the breast. Cover the breast with a double layer of aluminum foil to prevent it from drying out during the remainder of the cooking time.

08

Step

Continued Roasting (3 to 3.5 hours): Return the turkey to the oven, reduce the temperature to 350 degrees F (175 degrees C), and continue to cook until the turkey is no longer pink at the bone and the juices run clear when pierced with a fork. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).

09

Step

Resting (15 minutes): Remove the turkey from the oven, keep it loosely covered with foil, and allow it to rest in a warm area for at least 15 minutes before slicing. This resting period allows the juices to redistribute throughout the turkey, resulting in a more tender and flavorful bird.

For an even more intense flavor, consider brining the turkey for up to 12 hours.
If you don't have candied ginger, you can substitute with 1/2 teaspoon of ground ginger.
Be sure to use a food-grade bucket for brining to avoid any unwanted chemical reactions.
Ensure your turkey is fully thawed before brining to ensure even salt penetration.
