Step

Preheat the oven to 350 degrees F (175 degrees C). Generously coat an 8 1/2x4 1/2-inch loaf pan with cooking spray. Set aside. (5 minutes)

In a medium-sized bowl, whisk together the spelt flour, cinnamon, baking powder, baking soda, and kosher salt. Ensure there are no lumps. Set aside. (5 minutes)

In a large bowl, beat the eggs until they become light and pale yellow. Stir in the sour cream, applesauce, maple syrup, and vanilla extract until well combined. Mash two of the bananas and incorporate them into the egg mixture. Dice the remaining two bananas and gently fold them in, followed by 1 cup of chopped pecans. Gradually add the flour mixture to the wet ingredients, stirring gently until just incorporated. Be careful not to overmix. (15 minutes)

Pour the batter into the prepared loaf pan and sprinkle the remaining 2 tablespoons of finely chopped pecans evenly over the top. (2 minutes)

Bake in the preheated oven until a toothpick inserted into the center comes out clean, approximately 60 to 65 minutes. (60-65 minutes)

Once baked, place the pan on a wire rack to cool for about 10 minutes before inverting the loaf onto the rack to cool completely. (10 minutes cooling time)

For an enhanced nutty flavor, toast the pecans lightly before chopping and adding them to the batter.
If you don't have sour cream, plain Greek yogurt makes an excellent substitute.
Ensure your bananas are very ripe for the best flavor and moisture.
To prevent the top from browning too quickly, tent the loaf with foil during the last 20 minutes of baking.
