Follow The Directions

01

Step

Preheat the oven to 450 degrees F (230 degrees C). (5 minutes)

02

Step

Heat olive oil in a large, oven-safe skillet over medium heat. Add bacon lardons and cook until crispy, rendering the fat, about 5-7 minutes. Remove bacon with a slotted spoon and set aside on a paper towel-lined plate, reserving the bacon drippings in the skillet.

03

Step

Place Brussels sprouts on a sheet pan, season generously with salt and pepper, and drizzle with a portion of the reserved bacon drippings. Toss to coat evenly.

04

Step

Roast in the preheated oven for 15 minutes. Then, turn on the broiler and broil until the Brussels sprouts are tender and slightly charred, about 5-6 minutes. Watch carefully to prevent burning.

05

Step

While the Brussels sprouts are roasting, return the skillet with the remaining bacon drippings to medium heat. Add the sliced onions and sauté slowly, stirring occasionally, until they are deeply caramelized and sweet, about 15-20 minutes.

06

Step

Remove the Brussels sprouts from the oven and add them to the skillet with the caramelized onions. Stir in the cream-style corn and fresh thyme leaves. Cook over medium heat, stirring constantly, until everything is well combined and heated through, about 5 minutes. Season with additional salt and pepper to taste.

07

Step

Return the crispy bacon lardons to the skillet and toss gently to combine. Serve immediately.

For an extra layer of flavor, consider adding a splash of apple cider vinegar or a pinch of red pepper flakes to the Brussels sprouts while they are roasting.
If you don't have an oven-safe skillet, transfer the caramelized onions to a baking dish before adding the Brussels sprouts and other ingredients.
Freshly grated Parmesan cheese makes a delicious garnish for this dish.
