Once the cream puff shells have cooled slightly, use a skewer or knife to poke a small hole in the bottom of each puff. Pipe the goat cheese filling into the puffs until they are full.

For best results, use room-temperature eggs. If you forget to take them out ahead of time, you can submerge them in warm water for 5-10 minutes.
Be sure to let the dough cool slightly before adding the eggs; otherwise, you might cook the eggs.
Don't open the oven door while the puffs are baking, as this can cause them to deflate.
The filling can be made ahead of time and stored in the refrigerator for up to 2 days.
