For a creamier pesto, add a tablespoon or two of heavy cream or ricotta cheese. To prevent the basil from oxidizing and turning dark, blanch it in boiling water for a few seconds before adding it to the food processor. Pine nuts can be substituted for walnuts for a more traditional pesto flavor. For a vegan version, replace the Parmesan cheese with nutritional yeast or a vegan Parmesan alternative. Pesto can be stored in the freezer for up to 3 months. Portion it into ice cube trays for easy use.
