Place the wrapped potatoes on the grill, cover, and cook for 45 minutes to 1 hour, or until they feel very soft when squeezed through the foil. Remove from the grill and keep wrapped to retain warmth until assembly.

Sauté aromatics: While the potatoes are grilling, heat the sunflower seed oil in a medium-sized pan over medium heat. Add the diced red onion and sauté for 7-10 minutes, until softened and beginning to brown. Add the minced garlic and cook for another 2 minutes, until fragrant.

Combine beans and BBQ sauce: Add the drained black beans and barbecue sauce to the pan with the sautéed aromatics. Stir well to combine, then reduce the heat to low and simmer for a few minutes to allow the flavors to meld.

Craft the cilantro cream: In a food processor, combine the plain yogurt, minced shallots, salt, and lemon juice. Pulse until smooth. Add the cilantro leaves and pulse a few times more, just until the cilantro is finely chopped and incorporated into the cream.

For a smoky flavor, add a few wood chips to your grill.

If you don't have a grill, you can bake the sweet potatoes in a preheated oven at 400°F (200°C) for approximately 1 hour, or until tender.
