Rinse farro under cold water; drain. Place farro in a medium saucepan and add chicken broth, ensuring the broth covers the farro by at least 1 inch. Add more water if needed. Stir in 1 teaspoon of olive oil and sea salt. (2 minutes)

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer until the farro is tender and most of the liquid has been absorbed. This will take approximately 35 minutes for whole grain farro, or about 20 minutes for pearled farro. Stir occasionally to prevent sticking. (35 minutes)

Drain any remaining liquid from the farro. Rinse the cooked farro under cold water to stop the cooking process and fluff the grains. Spread the farro on a baking sheet to cool completely. (15 minutes)

In a large bowl, whisk together the extra-virgin olive oil, fresh lemon juice, Greek seasoning, and minced garlic until well combined. (5 minutes)

Add the diced tomato, cucumber, red bell pepper, red onion, and crumbled feta cheese to the bowl with the dressing. Toss gently to combine. (5 minutes)

Once the farro has cooled, add it to the bowl with the vegetables and dressing. Toss gently until the farro is evenly coated. Season with salt and freshly ground black pepper to taste. (2 minutes)

Serve immediately or chill for later. The flavors will meld together beautifully as it sits.

For an extra layer of flavor, try grilling the red bell pepper before dicing it.
Feel free to add other Mediterranean favorites, such as Kalamata olives, artichoke hearts, or sun-dried tomatoes.
If you don't have Greek seasoning, you can substitute with a blend of dried oregano, thyme, and rosemary.
This salad is best served chilled or at room temperature.
To make it a heartier meal, add grilled chicken, shrimp, or chickpeas.
