Follow The Directions

01

Step

Preheat oven to 425°F (220°C) with rack in the center position. (5 minutes)

02

Step

Mince garlic in a food processor or blender. With the motor running, slowly drizzle in 1/2 cup olive oil. Process for 30 seconds, then strain the oil through a fine-mesh strainer. Return 2/3 of the garlic to the infused oil, reserving the rest for the dressing. (10 minutes)

03

Step

Arrange baguette slices on a wire rack set over a baking sheet. Brush generously with the garlic-infused oil. Toast in the preheated oven until crisp and golden brown. (7 minutes)

04

Step

In a small bowl, whisk together the mayonnaise, lemon zest, 2 tablespoons lemon juice, Worcestershire sauce, grated Parmesan cheese, and the reserved minced garlic to create the Caesar dressing. Cover and refrigerate until ready to use. (5 minutes)

05

Step

Just before serving, in a separate bowl, gently toss the shredded chicken with the prepared Caesar dressing. Season with salt and pepper to taste. (2 minutes)

06

Step

In another bowl, toss the salad greens with the remaining 2 teaspoons of olive oil, salt, and pepper. Drizzle with the remaining 1 tablespoon of lemon juice and toss again. (2 minutes)

07

Step

To assemble the toasts, top each garlic-infused baguette slice with a portion of the dressed salad greens, followed by the seasoned chicken. Garnish with Parmesan cheese shavings. Serve immediately. (5 minutes)

For the best flavor, use freshly grated Parmesan cheese from a block. A microplane works well for grating, while a vegetable peeler creates elegant shavings.
The garlic oil can be made ahead of time and stored in the refrigerator for up to 3 days. Be sure to bring it to room temperature before brushing on the baguette slices.
If you don't have a rotisserie chicken, you can use leftover grilled or baked chicken breast.
Toasts can stand uncovered for up to 2 hours.
